Easy Crock Pot Recipe

This recipe was inspired by a friend on facebook. Thanks Denise!

1 Whole Chicken
4 Cups of chicken broth
Brocolli or celery (as much or as little as you want)
(as many as your heart desires) carrots
2 tablespoons of chopped onion
1 teaspoons of rosemary
Garlic salt to taste

Cook on high for 5 hours. Mom's of little ones be careful with the chicken bones.

This was so good. It fell right off the bone. And like with any crock pot recipe you can add as many vegetables as you like or you can do less.

Guacamole

I could live on it! Seriously! Here's my recipe but the great thing about guacamole is that you can add anything you want!!

2 avocados
1 tablespoon of diced red onion
1/2 tablespoon of chopped cilantro
2 tablespoons of seeded and diced tomato
1/2 teaspoon of salt
1 lime wedge
garlic salt to taste

I cut up the avocado while it's still in the skin and then scoop it out with a spoon. Mix all the ingredients together in a bowl. I wait till the end to add the garlic salt. I only add a "little bit".

Success!!

My dad will sometimes add green pepper or jalapenos. Some add more cilantro. I'm just not a big cilantro fan. So I don't add as much.  What do you like to add to your guacamole?

Crock pot does the body good.

I'm not a big fan of cooking, in fact it's the one chore I despise. I love baking but cooking is a different story. So when I give a recipe (unless it's my husband's) you can almost guarantee it's easy. Here's one we had monday night and boy it was GOOD!!

2lb pork tenderloin
3 tablespoons of minced garlic
3 tablespoons of soy sauce
1 pack of dry onion soup mix
1 cup of water
fresh ground pepper to taste
little bit of salt

Place all the ingredients in the crock pot and let it cook for 5 hours on low.  I served it with mashed potatoes and asparagus but you do whatever your little heart desires.

It's sooo good and easy!!!

recipe from tonight's dinner

A few weeks ago I sent out an email to several friends explaining some blog changes. Now I can share them with everyone. The changes are both cosmetic and in the content. 
In the email sent out I said that my desire was for this to be a place for women to share their hearts and experiences. So you will soon see "guest" bloggers that will write on different subjects. This is something I am really excited about!! 


Hubby made dinner tonight and it was amazing!! He can cook way better than I can. He kept his talent a secret the first year we were married. But his talents have since been discovered.....there's no turning back now! :)

Here is the recipe:






  • 4 skinless, boneless chicken breasts
  • salt and pepper to taste
  • 3/4 pound fresh mushrooms, sliced
  • 2 tablespoons all-purpose flour
  • 2 tablespoons olive oil
  • 6 cloves garlic
  • 1/4 cup balsamic vinegar
  • 3/4 cup chicken broth
  • 1 bay leaf
  • 1/4 teaspoon dried thyme
  • 1 tablespoon butter






DIRECTIONS

  1. Season the chicken with salt and pepper. Rinse the mushrooms and pat dry. Season the flour with salt and pepper and dredge the chicken breasts in the flour mixture. Heat oil in a skillet over medium high heat and saute the chicken until it is nicely browned on one side (about 3 minutes).
  2. Add the garlic. Turn the chicken breasts and scatter the mushrooms over them. Continue frying, shaking the skillet and stirring the mushrooms. Cook for about 3 minutes, then add the vinegar, broth, bay leaf and thyme. Cover tightly and simmer over medium low heat for 10 minutes, turning occasionally.
  3. Transfer the chicken to a warm serving platter and cover with foil. Set aside. Continue simmering the sauce, uncovered, over medium high heat for about 7 minutes. Swirl in the butter or margarine and discard the bay leaf. Pour this mushroom sauce mixture over the chicken and serve.


You will not be disappointed with this meal!

blog hop-Chicken Brie Pasta

This is my favorite recipe! I cook this when company comes over or I take dinner to a friend's house.

4 boneless chicken breast cooked and diced or 1 bag of Tyson fully cooked and cubed chicken breast

2/3 c. olive oil

2 large garlic cloves or 2 tsp. minced garlic in jar

2 c. diced tomatoes or 1 can diced tomatoes drained

2 Tbsp. basil

1/2 lb. brie cheese

16 oz. pasta cooked (egg noodles)

1/4 c. pine nuts

1/2 c. parmesan cheese


In a large skillet mix together olive oil, garlic, tomatoes, basil and brie cheese on low to medium heat. Warm until cheese has melted. Add chicken and warm.

In a large bowl combine pasta, pine nuts, and parmesan cheese. Add chicken mixture and toss gently.
